Chicken Pesto Panini - 7 points

Did a little spin on my turkey pesto panini and used chicken this time!

Ingredients:

Nature’s Own Light Honey Bread - 2 pts

Perdue Perfect Portions Chicken Breast (italian style) - 3 pts

Sorgento Low fat provolone - 1 pt

Low fat pesto - 1 pt

omg it was so yummy you have no clue…

just grill the chicken, and then make the sandwich and put it on a pan on the stove for a bit.. flip and your good to go!!!

i havent been on this account in a while.. cause i decided to count calories instead of doing weight watchers.. WRONG IDEA… i’m going to start again tomorrow and hopefully this time i will stay on it..

i feel really stupid though cause i lost so much on WW, and when i went to counting calories i thought i was loosing more.. but i didnt lose at all.. actuallly i gained?? uhh dumb.. ok.. enough ranting! haha

Vanilla Frappuccino.. WITH WHIPPED CREAM!! 3 points

Hi, so I’m tired of paying for my Starbuck's Cafe Vanilla Frapp Light (w/o whipped cream), so I thought I'd try to make one of my own!! And let me tell you.. it's not bad! :)

What you’ll need:

  • coffee - I used a Melitta Hazelnut Coffee Pod thing (0 points)
  • 1 tbsp Splenda (0 points)
  • Almond Breeze Unsweetened Vanilla Almond Milk (1 point)
  • Vanilla extract (0 points)
  • Land O’Lakes Sugar Free Heavy Whipped cream (2 points)
  • Ice

How to!

  1. Make a cup of coffee.. then add ice to chill it down
  2. Put in a blender with a handful of ice
  3. Add 1/2 cup of almond milk
  4. 1 tbsp of Splenda
  5. 1/2 tbsp of Vanilla extract
  6. Blend… duh..
  7. Top it off with 6 tbsp of whipped cream

There  you go!! Deliciousness!!! :)

Kettle Corn - 3 points

ok.. i’m OBSESSED with kettle corn.. i love the huge red bags from Popcorn Indiana (both the kettle corn and white cheddar).. idk if you know what i’m talking about but that brand is amazing. only bad thing about it is i can never stop eating it because it comes in such a large bag!

SO.. solution… Pop Secret 100 Calorie Pop Kettlecorn.

I had it last night while watching harry potter.. haha and it was by far the best microwavable kettle corn i have ever had.. and only 3 points.

i like to add a couple sprays of I can’t believe its not butter for some extra flavoring :)

but seriously.. SO GOOD.

Chicken Terryaki and Rice (food-court style!!) - 9 points

OK! so I just made this and it was DELICIOUS!!

What you’ll need:

~4 oz of boneless, skinless chicken thigh cutlets (i usually use chicken breasts, but my dad bought thighs and they were SO juicy!!) - 4 points

Teriyaki marinade (i used Ken’s Steak House brand) - 1 point

1/2 cup of brown rice - 4 points

Step 1:

  • Cut slits on both sides of chicken and place in plastic bag. (feel free to make more than one cutlet.. i made 6!)
  • Place the chicken in a big plastic bag, and add 1 tablespoon of marinade for ever piece of chicken
  • Shake the bag to evenly spread the marinade.. make sure you tightly seal the bag! haha
  • I rolled the bag up and put a rubber band on it to make sure the flavor was tightly packed
  • Marinate for about 2 hours.. put it in the fridge if it’s not defrosting like mine was!

Step 2: BBQ

  • I used my BBQ grill
  • Use tongs to take each chicken out of bag and grill for about 7-8 minutes on each side, or until there is no pink in the middle (raw chicken can make you sick)
  • If you don’t have a grill, you can cook your chicken on a skillet!

Step 3: Rice

  • Measure 1/2 cup of brown rice and put it in 1 cup of boiling water
  • Cook for 5 minute then take the pot off the flame and let it sit for another 5-10 minutes

Step 4: Serve!!

  • Scoop the rice on to a plate and add another 1/2 tablespoon of marinade on the rice if you want!
  • Place the chicken on the plate and ta da! you’re done!! :)
